Tasty AND pretty - how much more could you ask for in a salad?

 

I've been working my way through a marvelous cookbook - The Mediterranean Dish by Suzy Karadsheh. This is one of her tasty dishes:

Rainbow Baby Bell Pepper Salad

  • 1 pound baby bell peppers, stemmed and thinly sliced into rings
  • 6 Campari tomatoes, quartered
  • 2 scallions, trimmed, white and green parts chopped
  • 1/2 cup chopped fresh dill fronds
  • 2 large garlic cloves, crushed
  • 6-8 marinated olives (green or kalamata), pitted and roughly chopped
  • 1 teaspoon sumac
  • Kosher salt and black pepper to taste
  • Zest and juice of 1 large lemon
  • 3 tablespoons of extra virgin olive oil

In a large bowl, combine the bell peppers, tomatoes, scallions, dill, garlic, and olives. Sprinkle with the sumac and a large pinch of salt and pepper. Add the lemon zest and juice along with the olive oil, toss, taste, and adjust the seasoning. Best if set aside for 20 minutes or so to allow the flavors to marry.

  1. I love peppers, Sue, and always use them in recipes! I am growing poblano peppers from seeds as I enjoy them stuffed, and hope to have a nice supply by the end of summer.

  2. As you may realise Sue, I am a fan of peppers, mostly chilli peppers so I may give this a go when I finish my curry.

  3. We call them capsicums here, i'm a big fan of them, not only are they tasty but they are also colourful.

  6. Lyon is a city that I love, crossed by two rivers. In one day you can walk in the old Lyon, or take the funicular to the Fourvière hill and visit the Roman ruins. If there is still some time left, take a walk to the Croix Rousse hill. It's not a huge city either. And then of course go and eat in one of the typical restaurants of old Lyon (if you want to appreciate the local cuisine you'd better like wine and not be vegan :-)
    When do you think to comme to France ? If you stay a few days in paris, maybe we could meet. except in july, i planned not to be there
